This is the green tour, the one that leaves the fairy chimneys behind and heads southwest into the canyon country. Ihlara is a gorge eighty metres deep, cut by the Melendiz river through volcanic rock, with churches carved into its walls by the first Christians who sheltered here. You walk a three kilometre stretch of it, stop for lunch at a restaurant on the riverbank in Belisirma, then continue to Selime, a monastery hollowed out of the rock on a scale that has to be seen. On the way back you go down into Derinkuyu, the deepest and largest of the underground cities. Because the tour is private, the route and the timings are yours to change.

Good to know before you book

• The Ihlara walk is about 3 km on a mostly flat riverside path, and there are around 300 steps down into the valley at the start. Wear comfortable shoes.
• Derinkuyu involves narrow, low passages and steep stairs. If you are uncomfortable in confined spaces, tell your guide and you can wait above ground.
• There may be stops at craft workshops along the route. If you would rather skip them, tell your guide on the day.
